SPENT GRAIN BANANA MUFFINS

Spent Grain Banana Muffins

Recipe yields: 12 regular muffins

Ingredients:

½ cup dried spent grain flour  

1 ¼ cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon salt

2 large eggs

½ cup coconut oil (or vegetable oil)

1 cup packed golden (yellow) brown sugar, plus 2 tablespoons for topping

2 bananas

 

Preparation Method:

Preheat oven to 375 degrees F. Line a 12-muffin tin with paper liners.

In a small bowl, mix dried spent grain flour, all-purpose flour, baking powder, baking soda, cinnamon, and salt.

In a large bowl, whisk together eggs, golden sugar and melted coconut oil until well combined. Stir in the smashed ripe bananas. Fold in flour mixture until just moistened with a spatula.

Scoop batter evenly into muffin tin. Sprinkle remaining golden sugar over each muffin.

Bake muffins for 20 minutes or until slightly golden brown.

Cool in muffin tin 5 minutes, before moving to a cooling rack.  Best enjoyed when warm!

 

Muffins can be kept in an airtight container 3-4 days.

These Spent Grains Muffins are a Family favorite, they don't seem to last very long around our household. Great for breakfast or a snack throughout the day.
