SPENT GRAIN BLUEBERRY WAFFLES

Spent Grain Blueberry Waffles

 

Recipe yields: 6-8 waffles

 

Ingredients:

¾ cup dried spent grain flour

1 ¼ cups all-purpose flour

2 tablespoons granulated sugar

1 tablespoon baking powder

1 teaspoon salt

2 large eggs, lightly beaten

1 ¾ cups milk (or preferred milk alternative)

6 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1 ¼ cup blueberries, fresh or slight frozen

¾ cup of white chocolate chips

Powdered sugar

 

Preparation Method:

Preheat your waffle iron, spray with non-stick cooking spray and set aside.

In a large bowl, whisk together spent grain flour, all-purpose flour, sugar, baking powder and salt to combine.

In a medium bowl, beat the eggs and whisk together with milk and vanilla.  Stir into dry ingredients until mixture resembles a smooth batter.

Stir in melted and cooled butter.

Carefully fold in blueberries and white chocolate chips. Allow batter to rest 5 minutes before using.

Pour batter onto the centre of the preheated waffle iron and cook according to the manufacturer’s directions. Cook waffles until light golden brown and slightly crispy.

Serve immediately with butter and sprinkle powdered sugar. Consider adding any other favourite toppings, such as maple syrup, whipped cream and fresh fruit.  

Waffles can be refrigerated up to 5 days and re-heated in toaster for future enjoyment!
